Pesto Sauce with Radish Greens

 

8 oz angel hair pasta

2 oz radish greens ( and/or arugula )

2 oz sliced almonds 

4 oz olive oil

4 oz feta cheese

2 oz grated parmesan cheese

2 cloves garlic

salt- to taste

Red pepper flakes- to taste 

 

Clean the radish greens ( or arugula ) thoroughly and coarsely chop them up.  Using a food processor, add the almonds and mashed garlic.  Process them until finely chopped. Add in the radish greens ( or arugula ).  Gradually add in the olive oil while processing the mixture.  Continue to do so until pasty. Add in the cheese, salt and pepper and process only until mixed.   Cook the pasta until soft and mix in the sauce.  Serve with feta cheese on a side plate soaked in olive oil and red pepper for added flavor.
